Madras Recipe

Authentic Madras CurryWelcome to Madras Recipe, the home of all the most authentic Madras curry recipes. I started this site because of my love for this fiery Southern Indian dish and the great flavors and spices used in its creation. Growing up in the Midlands of England I had a lot of Indian friends and I remeber going to my friends house, Guvinder Jayaraman, where his mum used to make a fantastic Madras, usually chicken or lamb, but once in a while she’d knock up a king prawn Madras, which was always my favorite (if not the most authentic recipe).

After a lot of begging and pleading Guvinder’s mum, Jasminder, has agreed to share her authentic Madras recipe with me and now the world, she did say that in India the Madras curry comes from the Hindu culture and invariably it is made using vegetables rather than meat. In western culture meat is usually added to the Madras curry sauce. So enjoy and make sure you try it out!

Madras curry doesn’t have a ‘set in stone’ recipe like other dishes. It varies a lot depending on the season, what ingredients are available and from home to home. However I’m really confident that Madras recipes I have on this site will be some of the best you have tried (thanks to Mrs. Jayaraman!).

If you like a hot curry you’ll love a fiery Madras!

Thanks for the recipes. I had a lot of fun making them (the chicken madras is especially good!) and the family loved them, so thanks for putting them online

Hi Marc, it’s an E-book, it’s sent to your email. You can then either read it online or print the recipes off so you have them while cooking. You don’t need to enter your name or address, just your email address.

Kind Regards and hope you enjoy the recipes
